Sardine Potato Patties

Ingredients:

  • 2 cans of 155g sardines in oil/water (drained)

  • 2 cups of potatoes (boiled & mashed)

  • 1 cup frozen spinach (thawed, rinsed & excess water drained)

  • 1/2 red bell pepper (chopped)

  • 1/2 cup pet milk (or low-fat milk, water or chicken stock if your pet is lactose-intolerant)

  • 1/2 cup grated Parmesan cheese

  • 1 tablespoon of unsalted butter

  • 1 teaspoon of dried dill weed

  • 1 teaspoon of dried parsley

  • Panko/ whole wheat flour (optional)

  • Baking papers

Directions:

  1. Pre-heat oven to 160C.

  2. Break up drained sardines (including bones) with a fork.

  3. Add all of the remaining ingredients to the flaked sardines except panko/whole wheat flour & mix well.

  4. If the mixture is a little too wet, add some panko/whole wheat flour.

  5. Line cookie trays with baking papers.

  6. Spoon about 1-1 1/2 tablespoon of the mixture onto your palm & roll into a ball. Flatten the ball into a patty of 1/2 inch thickness & place onto the lined cookie tray.

  7. Continue making the patties until the mixture is used up.

  8. Bake for about 15-20 mins until the patties are browned.

  9. Cool the patties on a cooling rack before serving them to your impatient pet who is most probably waiting by your side now!
