Peanut Butter Biscuits

Ingredients:

  • 2 cups Bob's Red Mill Gluten Free All Purpose Baking Flour (or Brown Rice Flour)

  • 1 tablespoon baking powder

  • 1 cup natural creamy peanut butter (I use Adams)

  • 1 cup pet milk (or low-fat milk or low-sodium chicken/beef/fish stock)

  • Cooking oil (olive oil or canola oil)

Directions:

  1. Preheat oven to 190C/ 375F.

  2. Mix flour & baking powder (dry ingredients) in a bowl.

  3. Mix peanut butter & milk (wet ingredients) in another bowl.

  4. Add wet ingredients into the dry ingredients & mix well into a dough.

  5. Transfer the dough onto a light floured kitchen counter & knead several times before rolling the dough out to about 1/4 inch thickness.

  6. Cut out shapes with cookie cutters.

  7. Place the cut shapes onto a lightly greased baking sheet & bake for about 20 mins or until light brown in color.

  8. Cool the biscuits on a rack & then store in air-tight containers.
